What Is Çılbır? Turkish Eggs, Explained

If you've seen çılbır (pronounced roughly "chulburr") on a brunch menu and wondered what it is: çılbır is a classic Turkish dish of poached eggs served over creamy garlic yoghurt, finished with warm spiced butter. It's one of those dishes that sounds unusual the first time and becomes the thing you order every time after that — the cool, tangy yoghurt against hot chilli butter and a soft egg yolk is the whole point.

How we make çılbır at Kybelle

Our Cilbir Eggs follow the traditional build: creamy garlic yoghurt topped with perfectly poached eggs and sautéed baby spinach, finished with warm chilli butter and served with toasted sourdough for scooping. If you're hungry, add garlic beef sujuk sausage or grilled halloumi.
